I have recently entered into the world of bacon, and let’s just say, I’m not hating it!! This recipe I am sharing with you includes two of my favorite foods PLUS bacon! Sweet potatoes, eggs, and bacon….How can you go wrong? Jared and I LOVE this dish! We were both sad when we got to the last bite….. I’m not kidding. You should try it! Or come over to our place and we’ll make it for you! 🙂 We are morning people, so get here EARLY! 😀
This junk is GOOD. Here’s what you’ll need.
2 Medium-sized sweet potatoes
5 Slices of Bacon
1 small onion
3 cloves of mined garlic (Or lots of garlic powder)
Extra Virgin Olive Oil
Use a mandolin slicer to shred your sweet potatoes. You can also use a cheese grater (I have heard…) or you can dice them into little cubes and cook them. If you decide to dice them, they will take MUCH longer to cook! Once you have your shredded potatoes, set them aside and chop up your onion and mince your garlic. Begin sautéing the onions and garlic in a bit of EVO. I use high heat to speed up the process. Once they are MOSTLY cooked (translucent), toss in your sweet potatoes. Drizzle some EVO on top of the potatoes. Continue to mix the onions and potatoes together for a few minutes. Once the potatoes begin to soften, add about 1/2 cup of water to your pan. Increase the heat. Continue cooking them until the are soft, stirring continuously. While those are cooking, dice the bacon strips into little cubes. I use kitchen scissors to cut the slices up. Cook the bacon in a separate pan. When the potatoes are ALMOST done, add the bacon to the dish. Be careful not to overcook the bacon!!! Add a dash of salt and pepper to the dish if you would like!
Once the potatoes are all soft and yummy, make 4 little holes for your eggs. Crack 4 eggs into the holes and add about 1/4 cup of water immediately after. Cover the pan and let the eggs cook. The water helps to create steam and cook the eggs! Cook the eggs for about 3 minutes, or until they are cooked how you like them!
OR, you can just make fried eggs and put them on top of the dish if you like your yolk hard, like me!
