I refer to these sweet potato fries all the time so I figured it was about time to share the recipe with you all! I also shared this recipe on my friend Courtney’s blog! You should check it out. She is such a sweet girl and she posts lots of healthy recipes! Jared and I are notorious for bringing a whole bunch of sweet potatoes to our friend’s houses and making sweet potato fries right then and there as a side for dinner. Even our friends who aren’t typically Paleo eaters LOVE these things! There has only been one person EVER that didn’t like the fries and that was my Dad. He didn’t like them because they were TOO sweet! He’s crazy!! He doesn’t like ANYTHING sweet! It’s hard to believe he’s MY Dad! Haha. Anyway, here’s the recipe! Enjoy!
Ingredients (Serves 2)
2 Medium Sized Sweet Potatoes
1 Sheet of Parchment Paper
Olive Oil (We use Newmans Own Organic Extra Virgin Olive Oil)
Preheat the oven to 450.
Chop your sweet potatoes into thin, wide slices. Then cut them into long strips that resemble fries.
Make sure to use a sharp knife, because sweet potatoes can be tough to cut!
Cover your baking sheet with parchment paper.
Place your cut up sweet potatoes on the sheet.
Lightly drizzle Olive Oil over the fries.
Using your hands, mix the fries together making sure to coat all of the fries with olive oil.
Sprinkle a generous amount of salt, garlic and basil on top.
Pop them in the oven for 15 minutes, then flip them. Bake for 15-20 more minuets until soft!
The potatoes may be tough to cut…Use a sharp knife or find a man to do it for you! Haha! That’s it! They are super easy to make and serve as a great side for basically any dish! This particular batch of fries got a little burnt but that’s because I was impatient and didn’t wait for the oven to preheat! Typical….Yours shouldn’t burn if you wait for it to preheat and you flip them half way.
