Wow!! Today is officially day 30 of our Whole30!! That is pretty exciting!! It seemed to fly by!! I am about to go shopping with my Mama so I’m going to make this post short! Remember, this post is about yesterday, day 29! Tomorrow I will write about the final day and give an overview of our thoughts of this Whole30 experience!
We had planned to eat sweet potato hash for breakfast, that’s what was on the menu at least. That is quite a heavy breakfast and neither of us were hungry enough. I decided to whip up some type of breakfast scramble instead. I sautéed 1 yellow onion with garlic and then added 1 sweet cubed sweet potato. I let this cook for about 15 minutes. It took FOREVER for the sweet potato to soften! Once it was all cooked, I added some spinach. We topped this deliciousness with some scrambled eggs! It was great!
After breakfast I ran out to finish some errands. I had to run in Walmart to get a watermelon because they are only $2.99 at Aldi this week so I wanted to run in there are price match! That’s a steal!
I had turkey roll ups with some watermelon for lunch. (Not pictured….Sorry!)
Jared and I had a free night last night and we did NOT want to waste any time cooking! We really do love cooking together, but our time together during the week is so limited that we would rather not spend time cooking and cleaning up the kitchen! That morning I decided to throw two chicken breasts in the crockpot with about 1/4 cup of chicken broth. I let it cook on low for 4 hours. I used two forks to shred it and turn it into bbq chicken! We used the Nature’s Hollow BBQ Sauce that I mentioned in this post. I also tossed two sweet potatoes in the oven and let them bake for an hour. Easy peezy! This meal was delish!!
